This Spanish Viognier seemed like a great idea to pair with a Grilled Caesar Salad with chicken. Little did I know how delicious it actually is and how well it paired with the Grilled Caesar!
Dominio de Punctum hails from La Mancha in central Spain on the Meseta Central – a high plateau. Las Pedroñeras is the town southeast of Madrid where Dominio de Punctum calls home. This area has high elevation, receives very little rain, and has a significant amount of limestone – all perfect conditions for viticulture.
A relatively young winery, Dominio de Punctum was established in 2005 by 3 siblings. The siblings oversee all aspects of the winery, with special emphasis on organic and biodynamic techniques.
Viento Aliseo Viognier displays a bright golden color in the glass. The aromas wafting from the glass include beautiful exotic flowers, hay, and white peach. These aromas persist to the palate with lemon joining the party on the palate. This Viento Aliseo Viognier I enjoyed was a 2016 vintage. The wine was still fresh and bright with great acidity.
The bright and fantastic acidity was the perfect counterbalance to the unctuous Caesar dressing. Since the romaine was grilled, it added deep charred, smoky notes to balance the floral aromas from the viognier.
Viento Aliseo Viognier is a delicious, enjoyable and inexpensive wine that is turning heads and winning awards. If you see this wine in the market, grab it because you will not be disappointed!
